Baking has always been one of my very favourite hobbies. It allows me to be creative, while also enjoying the necessity for measured ingredients. Plus, my house always smells fantastic and my family loves it!

With summer almost here, it means camping season. For most, this means enjoying food over the fire and choosing foods that are easy to cook and simple. This is where my Campfire Coffee Cake with Maple Glaze comes in!

Campfire Coffee Cake

I found this fabulous recipe from the Laughing Spatula while I was pinning on Pinterest. It looked so amazing that I had to try it out for myself!

You will need for the Cake:

2 eggs
3/4 cup sugar
1/2 cup butter
1 teaspoon vanilla extract
1 and 1/4 cup flour
1/2 sour cream
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

For the Streusel Topping:

1/2 cup flour
1/4 cup brown sugar
1 and 1/2 teaspoons cinnamon
1/4 teaspoon salt
3 tablespoons butter

For the Maple Glaze:

1/2 cup powdered sugar
2 tablespoons maple syrup
2 tablespoons milk

Preheat over to 350 Degrees Fahrenheit. Grease a 9×5 loaf pan.

Cream together butter and sugar. Mix in eggs, vanilla and sour cream. Combine well.

In a different bowl, mix together flour, baking powder, baking soda and salt. Combine with wet ingredients.

In a separate bowl, combine all ingredients for the streusel topping. Mix with fork until butter is pea-sized!

Pour 1/2 the cake batter in the pan, then pour 1/2 the streusel topping on top, followed by the remaining cake batter and finally the remaining streusel topping.

Bake for 45 minutes or until cooked thoroughly.

Mix Maple Glaze ingredients and pour over cake!

To make this campfire ready, simply bake as normal. Put Maple Glaze in an air-tight container and wrap the coffee cake in tin fold. Simply warm the cake over the fire in the morning and pour on the Maple Glaze!

I struggle to see what makes this a “campfire” cake. You can warm ANYTHING over a campfire.
