Baked Sweet Potatoes Recipe

Trying out new recipes in the kitchen is always a great way to add something new to your cooking routine. For me, I usually only make sweet potato creations during the holidays. However, considering that sweet potatoes are a healthy alternative to some of my families favourite food staples, I just had to make an effort.

This meant finding a recipe that would be quick, easy and appealing. Surprisingly, it wasn’t hard at all. I found a fabulous Baked Sweet Potatoes recipe to try in the LiveBetter Magazine and changed it up a bit to fit my family’s tastes!

Baked Sweet Potatoes

Baked Sweet Potatoes

You will need:

  •  2-4 large sweet potatoes
  • 1 cup cheese of choice
  • 1/3 cup plain Greek yogurt
  • 1/4 cup bacon
  • 1/4 tsp garlic salt
  • 1/4 cup chopped red pepper

Wash the sweet potatoes and microwave on a plate for 8 minutes.

In the meantime, mix the remaining ingredients together in a bowl.

Cut an X-shape on the top of each sweet potato. Grip the bottom side of the sweet potato and push up until the flesh starts to pop out through the X-shape. Using a fork, fluff the flesh. Form a well in the flesh and top with yogurt/cheese mixture.

    I love how you used Greek yogurt. I find it so smooth and creamy. And you can’t ever go wrong with bacon. Great recipe and looks delicious!

    Actually i dont care much for sweet potato but hubby loves them so after he has been talking about these for weeks now i decide to make them again but added a white potato for myself….i have to say Kristen this is so delicious….and hubby is all smiles when he found this on his dinner plate last night .
