Banana Zucchini Bread Recipe

I have always been a huge fan of homemade bread recipes. Making bread at home always makes the house smell amazing and I always find it so hard to wait for that first bite of bread. For my Friday Recipe Club post this week, I needed to use banana as my inspiration. Since my favourite bread of all time is zucchini, I found a good recipe that incorporated both and I changed up a bit!

The result was a Banana Zucchini Bread that is moist, delicious and sure to be a family favourite! I loved how simple the recipe is and that the ingredient list, aside from zucchini, are all staples in my kitchen! I didn’t include nuts in this batch, but I definitely will in the next.

Banana Zucchini Bread Recipe

Banana Zucchini Bread

You will need:

  • 3 eggs
  • 3/4 cup vegetable oil
  • 2/3 cup packed brown sugar
  • 1 cup sugar
  • 1 and 1/2 cups zucchini, grated
  • 2 and 1/2 cups bananas, cut up
  • 1 teaspoons vanilla
  • 3 and 1/2 cups flour
  • 1 and 1/2 teaspoons baking powder
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Banana Zucchini Bread

Preheat oven to 325 degrees Fahrenheit.

Mix together eggs, vegetable oil, brown sugar, sugar, zucchini, bananas and vanilla. Next, add in the flour, cinnamon, baking powder, baking soda and salt.

Divide batter between two greased 8×4 loaf pans. Cook for 50 minutes.

Banana Zucchini Bread that is the perfect dessert or snack! Yummy and moist!

    I’m going to make this today! I was wondering how thick the pieces of banana should be cut? Then in guessing I mash them and then add to batter.

      Cut them to your liking. I usually do a chunkier piece at like 2 inches
