Best Ever Chicken Enchiladas

My family loves chicken. It is one of the most versatile meats and can be made in countless fabulous ways. One chicken dish that my family and I can never seem to get enough of is chicken enchiladas. Through the years, I have made them so many different ways.

However, my basic recipe has always remained the same until recently. In an attempt to save time in the kitchen, I picked up a rotisserie chicken from the grocery store and my Best Ever Chicken Enchiladas were born. Seriously, I can’t even express to you how much better the enchiladas tasted and definitely deliciously addictive!

These Best Ever Chicken Enchiladas are quick, easy and a huge time saver!

Best Ever Chicken Enchiladas Just Makes Dinner Better!

You will need:

  • flour tortillas {roughly 8}
  • shredded chicken {I recommend using a rotisserie chicken}
  • cheddar cheese
  • enchilada sauce {mild}

Prepare each tortilla as follows: Spread about 1 tablespoon of enchilada sauce on tortilla. Add your desired amount of cheese and chicken and fold tightly. Complete this for each tortilla and place them side-by-side in a casserole dish. Top with remaining enchilada sauce and cheddar cheese.

Preheat oven to 350 degrees Fahrenheit.

Bake for 35 minutes or until the cheese is thoroughly melted.

    (Best Ever Chicken Enchiladas) I have made this a few times myself, the whole family really likes them too. I make two glass casserole dishes of it. (It is yummy)

    I’ve never eaten chicken enchiladas, mainly because of the enchilada sauce being too spicy for me. I’m wondering what other sauce I could use as the idea does appeal to me.

      They do have a green sauce that is not spicy and very mild!

    I’ve mixed up chicken stock with sour cream & jack cheese and poured it over chicken enchiladas before baking. If you like spice you can add finely minced jalapenos to the sauce. Yummy!

      Oh my gosh Elizabeth! You have NO idea how much I needed to read this .. my husband gets really bad heartburn from the red sauce and I have been anxious to try something different for him ….. seriously … going to try that!!!!!!!!!! THANK YOU!!!!!!!!!!!!!!!!!!!!!
