Breakfast is such an important start to the day, especially when you have children. When I recently came upon a Bisquick recipe in one of my favourite magazines that featured a delicious-looking breakfast casserole, I knew I had to try it. After all, trying out a new breakfast recipe is always a great way to bring family together in the morning!
Breakfast Casserole
- 24 oz. bulk pork sausage
- 1 cup chopped bell pepper
- 1/2 cup chopped onion
- 3 cups frozen hash browns
- 2 cup grated Cheddar
- 1 cup Bisquick mix
- 2 cups milk
- 1/4 teaspoon pepper
- 4 eggs
1. Preheat oven to 400 degrees Fahrenheit. Over medium heat, cook sausage, bell pepper and onion. Stir occasionally and drain. In a 13 x 9 baking dish, combine sausage mix, hash browns and 1 & 1/2 cups Cheddar.
2. In separate bowl, combine Bisquick, milk, pepper and eggs. Pour into the baking dish.
3. Bake for 40-45 minutes uncovered. Pour on remaining cheese. Bake for 2 minutes until melted.
Makes 12 servings.
