Bunnies in the Lettuce Patch Cupcakes

It is hard to believe that Easter is less than a week away. It seems like each holiday creeps up faster and faster each year. Luckily for me, I was prepared. I did my shopping for Easter goodies last month. It allowed me to get some Easter treats finished early instead of waiting last minute.

Cupcakes are one of the most favourite desserts in my home, I decided to be a little creative. My Bunnies in the Lettuce Patch Cupcakes are not only ridiculously easy to make, but they are also Easter bunny approved!

Bunnies in the Lettuce Patch Cupcakes

You will need:

  • chocolate cupcakes prepared as directed
  • mini Russell Stover’s Easter Bunnies
  • green food dye
  • buttercream icing
  • Wilton disposable icing bag with #18 tip

For these particular cupcakes, I went with my Best Ever Buttercream Frosting! It pairs perfectly with chocolate cupcakes and the taste is divine!

Use green food dye to colour the frosting and piped it out to make the lettuce patch using a Wilton #18 tip. I finished the look by adding one bunny per cupcake. I went with mini Russell Stover’s Easter Bunnies that I picked up from the Bulk Barn!

    Oh my gosh this is so cute! If you could find little kitten chocolates you could do all different colours of icing and call it kittens playing with yarn balls! Lol!
