Cinnamon & Sugar Piggies Cookies Recipe

I have always loved to bake. My grandmother and mom both would make wonderful desserts when I was a child, so I came by it pretty naturally. Now that I am a mom, I am always finding fun recipes to try out for the kids. This last weekend, we had a campout in the living room as we often do on the weekends.

It included a family-friendly movie, popcorn and yummy dessert. Since I wasn’t able to run to the store to pick anything up, I decided it was a baking kind of night! Cookies are always a hit, so I browsed some of my favourite recipe sites online and found Piggies Cookies!

Cinnamon & Sugar Piggies Cookies

What I loved best about the recipe was the fact I had all the necessary ingredients already in my kitchen. Plus, with only six ingredients needed, it was a quick and easy recipe to make. The only question I had was whether or not these would be a big hit with my kids. Luckily, they came out absolutely delicious and we ate them all up before the movie was over!

Cinnamon & Sugar Piggies Cookies

You will need:

1 & 1/4 cups flour

1/4 cup sugar

1/4 teaspoon salt

1/3 cup shortening & 1 tablespoon {for spreading}

2+ tablespoons warm water

Cinnamon

1. Preheat oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper.

2. In a bowl, mix together flour and salt. Cut in 1/3 cup shortening until the mixture forms pea-size balls. Form a small area in the center of the mixture, pour in water, stir with fork to form dough. Add water a teaspoon at a time as needed. Shape dough into a ball.

3. Flour work surface. With a rolling pin, roll out the dough into a rectangle shape {12 x 16}. Use 1 tablespoon shortening to spread over the rolled out dough. Sprinkle the dough with sugar and then cinnamon. Roll the dough tightly into a log shape. Slice into 1/2 to 3/4-inch thick slices. Put on baking sheet.

4. Cook roughly 8 minutes or until very lightly browned.

    I love the sound of this recipe and they look delicious – what a shame my son won’t even touch anything with cinnamon in it. I must remember to mention this when he yet again goes on and on about me not eating spicy food 🙂
