Coconut Cupcakes

Baking is truly a passion of mine. I absolutely love baking up a storm with an end result of deliciousness!

When it comes to desserts, there is nothing quite as delectable as a cupcake. These Coconut Cupcakes are not only delicious, but also super easy to make.

Coconut Cupcakes Recipe

Coconut Cupcakes

Prep Time: 10 minutes

Cook Time: 15 minutes

Makes: 12 cupcakes 

Ingredients:

  • 2 cups flour
  • 2 tsp baking powder
  • 1 egg
  • 1-1/4 cups with additional 4 Tbsp Thai Kitchen® Coconut Milk
  • 3/4 cup Billy Bee Honey
  • 1/2 cup butter, softened
  • 1/4 cup shortening
  • 1 tsp Club House Imitation Coconut Extract
  • 2 cups icing sugar

Tools needed:

  • Cupcake Baking Tin for 12
  • Baking Cups

Directions: 

Preheat oven to 350°F

Mix together flour, baking powder, egg, honey and 1-1/4 cups coconut milk; mix well.

Place baking cups in cupcake tin and fill each 2/3 way full.

Bake for 15 minutes until cooked thoroughly. Remove from oven and cool completely.

In a mixing bowl, cream together butter, sugar and coconut extract. Add in 4 Tbsp coconut milk; mix well.

Frost cupcakes.

    How much sugar do you use for the frosting? I am going to assume it is icing sugar? These sound AMAZING and are now on my MUST BAKE list!!
