Comfort food has always been a favourite in my family. There is nothing quite like cold weather and sitting down to a warm bowl of delicious soup.
For this very reason, I decided to take comfort food to the max and made potato soup. This was my first time making it and I can’t believe I waited this long!
You will need:
3 cups potatoes, chopped into chunks
2 cups chicken broth
2 cups milk
3/4 onion, chopped
1/2 cup potato flakes
3 tablespoons bacon bits
2 tablespoons butter
1 teaspoon dill weed
1/2 teaspoon salt
1/4 teaspoon pepper
Begin by melting the butter in a saucepan on medium heat. First, cook onion for about 10 minutes. You will then add the potatoes, chicken broth, salt, pepper and dill weed. Bring to a full boil. Set to simmer until most of the chicken broth is absorbed.
This usually will take about 25-30 minutes. Add in milk, bacon bits and potato flakes. Keep in mind that the potato flakes will make this soup more hearty style versus soupy. So omit if you enjoy more of a normal soup texture. Again, bring to a full boil. Done!

I love potato soup, I usually make leek & potato though. Nothing better than soup to warm you up on a cold winter evening. 🙂
