My daughter had her 7th birthday in June. In the past, we have always invited her whole class. This year, however, I was wanting a smaller party. I have found that having fewer friends over is more personal and leads to a better party. It was also appealing to go with something other than just a regular cake.
I came up with the idea for a Cupcake Sundae by pairing two things kids love, cupcakes and ice cream. This was my first go round at the recipe and it was a big hit at the party.
Cupcake Sundae
You will need:
Chocolate cake mix, prepared as cupcakes
Vanilla Ice Cream
Chocolate Syrup
Caramel Syrup
Whipped Cream
Maraschino cherries
Sprinkles
To begin, you need to prepare your chocolate cake mix as cupcakes. Follow the directions on the package. Once the cupcakes are out of the oven, you will need to make them into mini bowls. There are two ways to make this happen.
First, use another cupcake pan and place it on top of the baked cupcakes and press down all the way. This is the easiest way. If you don’t have another cupcake pan to use, you can also use a spoon to get a bowl shape.
Once the cupcake bowls have cooled, you can now plate them. An ice cream scoop is the best way to get a round look for the ice cream. You will need to top the cupcake bowl with a single scoop of vanilla.
Place whipped cream on top of the ice cream. I used a Wilton Piping Bag to pipe out the whipped cream. Drizzle with chocolate and caramel syrup, followed by sprinkles and a cherry!
The party-goers went crazy for their own personal Cupcake Sundae. I customized each to what the guest wanted and there were no leftovers by the time the party was over. I know you will love these as much as I did!
