All things fall fantastic are only a couple weeks away, with the start of fall being September 22nd! Fall has always been my absolute favourite time of year. It is the changing colours, delicious baking and weather you can’t pass up!
One of my favourite fall fruits is apples. Everything delicious comes from when you bake with apples. I found the perfect apple recipe on the Food Network and my Easy Apple Pie Bites were created!

Easy Apple Pie Bites
Apple Meets Delicious Pastry That Fit in Your Hand!
Ingredients
For the Crust
- 2 and 1/2 cups flour
- 2 sticks butter unsalted
- 1/2 cup ice water
- 1 tsp sugar
- 1/2 tsp salt
Apple Pie Mix
- 2 apples peeled and cubed
- 1/4 cup sugar
- 1/2 lemon
- 1 tbsp flour
- 1 tsp cinnamon
- 1 egg wash egg whisked with 1 tbsp water
Instructions
For the Crust

Start the crust by mixing together flour, salt and sugar in a large bowl. Cut in the butter.

Add the ice water 1 tbsp at a time and mix.

Separate the batter into 2 discs, wrap with plastic wrap and refrigerate 1 hour.
Apple Mix Preparation

In a small bowl, dice apples and add lemon juice as you go. Mix in flour, sugar and cinnamon.

Mix apples until coated evenly and refrigerate.

Line a baking sheet with parchment paper.

When the dough is ready, smooth it out evenly with a rolling pin.

Use a cookie cutter to create mini discs. You should be able to come out with about 24-26 mini discs of dough.

Lay dough discs on baking sheet and scoop 1 Tablespoon of the apple mix into the centre.

Apply the egg wash to the circumference of each disc. This will act as glue when you put them together.

Stretch out the remaining discs to fit over the top of each pie. Crimp edges together with a fork. Score each pie using a floured butter knife.

Refrigerate for 20 minutes and set oven to 425 Degrees Fahrenheit.

Bake for 20 minutes and enjoy!
