Easy Butter Pecan Tarts

It wasn’t until this past Christmas that I finally tried my first butter tarts. I can’t really say why it took me so many years to try something so absolutely delicious, but there is no looking back now. My friend was the one kind enough to show me the buttery light and I naturally asked for the recipe.

This week’s Friday Recipe Club ingredient is pecans, so it didn’t take me more than a few seconds to instantly think of adding them to the already delicious butter tarts. In doing so, the remarkably easy butter pecan tarts were created! I will warn you though, once you have tried them you are going to be asking for seconds!

You will need:

•12 pastry tarts
•1 cup brown sugar
•2 tablespoons milk
•1/3 cup butter, softened
•1 egg
•1/2 cup pecans

Preheat oven to 450 degrees Fahrenheit. Set the tarts in a muffin pan.

Mix together all the ingredients. Fill each tart with two-thirds of the mixture.

Bake at 450 degrees Fahrenheit for 8 minutes. Reduce temperature to 350 degrees Fahrenheit and cook for 15 minutes.

I have always used a recipe that called for corn syrup along with the brown sugar, does the filling in these still have the gooey texture? Did you use regular size or mini tart shells?

Hi Judy! It does create a gooey texture, which I love. I used regular size tart shells for these, but you could easily use the mini as well!

I’m not a fan of pecans but I thought that I could use walnuts instead as these sound delicious.

Do they taste the same without the corn syrup?

I honestly can’t say as I have never made them without, but I would think it would take away from some of the yum. Maybe consider using honey?
