When I think of an extremely versatile food, I instantly think of eggs. They can be boiled, baked, fried and so much more. Plus, they taste absolutely amazing on a sandwich, which is where the inspiration for my Egg Salad Sandwich came from.
My husband and children cannot ever seem to get enough of eggs during the week, so it is important I find ways to incorporate them without repeating recipes constantly. I love the simplicity and ease of an Egg Salad Sandwich, while it can also be taken up a notch depending on the occasion!
Egg Salad Sandwich
You will need:
Hard Boiled Eggs
Mayonnaise
Mustard
Bread of Choice
The beauty of this recipe is that you make it to your tastes. You can put a ton of eggs, while cutting back on the mayonnaise and mustard for a thicker style or go all out with the mustard!
Choose a bread that compliments the eggs, such as rye, french, or a croissant. This recipe is all about what your perfect egg sandwich looks like!
In a bowl, cut up hard boiled eggs into cubes. Add in desired amount of mayonnaise and mustard to the cubed eggs. Mix until combined and serve on bread of choice!

I go one step better and I boil up a dozen eggs all at once – then I make a big egg salad and stick it in a container in the fridge. My husband or myself can just make sandwiches when we want to. I also make this up for my Mom in the seniors home. So nice to have it all ready in the fridge. I do this with salmon and tuna too.

I like how egg salad can be customized to whatever your tastes are. I like a bit of pickle relish and green onion in mine. Sometimes I add a bit of curry powder.

I love egg salad sandwiches, always had them at the kid’s hockey tournaments. I sometimes chop up spring onions (green onions) and add them too, delicious.
