Creamy Parmesan Chicken Penne

Last week I posted the Slow Cooker Pot Roast Recipe that I was able to create thanks to the wonderful mix from Club House! The pot roast was absolutely delicious, so I was super excited to finally try out one of their Flavourful Recipe Mixes for dinner.

There are 6 different Flavourful Recipe Mixes to choose from {Tuscan Chicken, Lemon Thyme Pork, Lemon Ginger Beef Stir-Fry, Hickory BBQ Ribs, Herbes de Provence Roasted Chicken and Creamy Parmesan Chicken Penne} and deciding on just one was far from an easy task. Since I had chicken thawing in the fridge already, I decided to go with the Creamy Parmesan Chicken Penne and I was so glad that I did.

As I mentioned in my previous post, the fact that a recipe and grocery list is on the back of the mix packet is beyond helpful. I love that the recipe is not time-consuming and that the grocery list is not overwhelming.

I ended up substituting fresh tomatoes instead of diced and Rigatoni pasta instead of Penne because that is what I had on hand. The only item I did not have was half-and-half, which my Husband kindly picked up at the grocery store prior to dinner.

You Will Need:

  • 2 Cups Dry Penne Pasta
  • 1 Can Diced Tomatoes with Juice
  • 2 Tbsp Butter
  • 1 Lb Thinly-Sliced Chicken Breast
  • 1 Cup Half-and-Half
  • 1/2 Cup Grated Parmesan Cheese

Creamy Parmesan Chicken Penne

To create this delicious dish, I melted the butter in a large pan for 5 minutes on medium-high heat. I then added the chicken and cooked it roughly 5-10 minutes so that it was brown. After that I added the seasoning mix, cream, cheese and tomatoes, which I brought to a boil and mixed consistently. Finally, I simmered the dish on low for 5 minutes. During this time, I also cooked the pasta separately. Once the dish had simmered, I added the pasta and mixed! Could that have been any easier?

Since this was my first time making this dish, I was a little anxious to find out how it would turn out. However, the mouth-watering smell that was created while I cooked was reassurance enough that this dish would be absolutely delicious! I can’t thank Club House enough for coming up with such fantastic mixes to save a Mom time and sanity!

And how did my Creamy Parmesan Chicken turn out? It was one of the best tasting dishes I have ever created, which says a lot. The taste was ideal and the flavor was absolutely perfect. The seasoning mix was what put this dish over the top in my book and I will definitely be creating this again in the future.

My Son was sick this day and even he gobbled down every bite on his plate. Being that I am also pregnant, I admit to eating leftovers from this dish that very evening as well. Whether you are a busy Mom looking for a delicious, yet quick dinner or just love to try out new recipes, you are definitely going to want to try out this one!
