Funfetti Cake

The end of January was my son’s third birthday. It was very low-key with only our family, but it was special. Children are such a blessing and enjoying a birthday through a child’s eyes is always pretty fantastic. In the interest of time and my sanity, I went with a sprinkle birthday cake that was delicious, moist and rainbow-colour fantastic!

I have seen so many styles of rainbow sprinkle cakes and really wanted something that my son would enjoy the most. Since he loves all things sprinkles, having the sprinkles go on top was the perfect fit. Funfetti Cake

You will need:

Two 9-inch round cakes
Buttercream frosting
Sprinkles
Wilton colour dye
Wilton Tip #18
Piping Bag

To begin, you need to bake two 9-inch round cakes. You can use a boxed mix if you want to be quick about it. Keep in mind that a homemade cake holds together better than a boxed cake.

Once baked and cooled, level the cake. This can be done with a professional leveler or with a knife. Next, ice the round cakes together. For the inner and outer icing, I use my Best Ever Buttercream Frosting.

It is the perfect consistency and delicious every single time! You want to make sure the sides are covered well and that the top of the cake has enough icing to hold the sprinkles in place.

Once all iced, take your sprinkles and start to dump them on the top of the cake. Use one hand to spread the sprinkles while the other tries to keep them from rolling off or onto the sides. This takes a few minutes, but be patient as you want the sprinkles to be relatively equal in height.

Once the sprinkles are on, use your piping bag and tip to decorate around the bottom of the cake. Tint your frosting if you want a fun coloured look!

    My son is 26 and he still insists that I put sprinkles on everything ty so much . he has been bugging me to make a cake 🙂

    You know, there is something so tremendously joyful about sprinkles. It reminds me of being a fun, happy kid. My boys loved sprinkles too.
