Gingerbread Teapot Cookies

I have been cake decorating for a few years now. I am self-taught and it is something I really enjoy doing. However, one area of decorating I haven’t tried is cookies.

I love to make and eat cookies, but decided it was time to challenge myself to something new. I decided to start by making Gingerbread Teapot Cookies. While they were really only my first decorating practice run, they were delicious and adorable!

Gingerbread Teapot Cookies

For the recipe, I used Sweetopia’s Gingerbread Cookie Recipe. I wanted one that would create cookies perfect for decorating and this was definitely it!

You will need:

  • 6 and 1/2 cups flour
  • 1 and 1/4 cups butter, unsalted
  • 1 cup brown sugar, packed
  • 3 teaspoons cinnamon
  • 3 teaspoons cloves
  • 3 teaspoons ginger
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup molasses

Mix together butter and brown sugar until creamy. Add spices, molasses and eggs. Finally, mix in flour and salt.

Break dough into roughly 3 balls, wrap with plastic wrap and let sit in the fridge for at least an hour.

Preheat oven to 350 degrees Fahrenheit. Roll out the gingerbread dough and cut into shapes. Bake cookies for 10-12 minutes. Cool completely prior to decorating.

For the frosting, I made Royal Icing.

You will need:

  • 1 kg icing sugar
  • 1 teaspoon vanilla
  • 5 Tablespoons Meringue Powder
  • 3/4 cup warm water
  • 1 teaspoon cream of tarter

I recommend you use a mixer, especially for the end step of mixing the icing sugar! Mix together Meringue Powder and warm water. Add in vanilla and cream of tartar. Once mixed well, add icing sugar. Mix icing sugar for roughly 8-10 minutes until creamy and fluffy.

Once the icing is ready, tint it the desired colour. I started by outlining the teapots. Once that dried, I added warm water, a teaspoon at a time, to make the royal icing a much thinner consistency. I then piped it onto the teapot. Once dried, I decorated. It is as easy as that!

you did a super job on these little teapots – I think I like the two at the left best πŸ™‚ I remember many many years ago making my own wedding cake, 3 tiers with home-made marzipan and royal icing, decorated with flowers etc. I really enjoyed making that but it did take a long time πŸ™‚
