One of my Dad’s very favourite Christmas programs was How The Grinch Stole Christmas. The animated version follows perfectly with Dr. Seuss’ book and I couldn’t even begin to guess how many times I have seen it since I was a child.
This will be the eighth Christmas without my Dad and I am proud to say I have made sure to continue the tradition with my own children. We have already watched it roughly five times and it isn’t even December yet. These Grinch Cookies are fabulous for whatever holiday program or celebration you are enjoying!
Grinch Cookies
You will need:
- 3/4 cup butter
- 1/2 cup sugar
- 1 cup light brown sugar, packed
- 2 eggs
- 1 tbsp. vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups flour
- 2 cups chocolate chips
- green food colouring
- green decorating sugar (optional)
Instructions:
Preheat oven to 375°F.
Mix together butter, sugar and brown sugar. Add eggs and vanilla extract. Mix thoroughly.
Add baking soda and salt. Add flour one cup at a time until blended. Use food colouring and blend until desired colour is reached.
Fold in chocolate chips.
Bake for 12 minutes or until done. If you decide to use green decorating sugar, do so immediately after the cookies coming out of the oven as the heat makes them stick!
Makes 45 cookies.
