I am just starting to see Halloween everywhere I go. From decorations to costumes, the spookiest night of the year is definitely going to be spooktacular this year. Best of all, Halloween is on a Saturday, which means a full day with the kids to enjoy all things Halloween. I normally get my Halloween decorations up September 1st, but I waited a couple weeks and just put them up yesterday.
While grocery shopping a few days ago, I snagged some ready to bake cookie dough. I am all about homemade, but when in a pinch, ready to bake works just as well. Plus, it is a huge time saver. I snagged the Spooky Cat as I knew they would make the perfect Halloween Cookie Sandwiches.
Halloween Cookie Sandwiches
You Will Need:
Ready to Bake Sugar Cookie Dough
Frosting (I used fluffy white from a tub to save time)
Halloween Sprinkles
Prepare cookies as directed on box. Once baked, allow cookies to cool completely before working with them.
Frost one side of back of cookie very well. You want it thick enough so that it will squish out of the cookie. Place cookies together and squish out frosting.
Roll cookie sandwich in Halloween sprinkles until coated.
Repeat and Enjoy!

I was wondering how the cat got on the cookies, having read the comments I now realise that it’s a special Halloween Cookie Dough from Pillsbury. I’ve never noticed them but next year I’ll keep my eyes open. Love the way you’ve made them even more special 🙂
