Healthy Taco Bowls

This year I am working on becoming healthier. I realize that it takes time to create a change and I am working my way through it. I have been pretty happy so far with the changes I have made for my health as well as that of my family’s.

With one of my family’s favourite foods being cheese, it has been important to incorporate healthy change while still enjoying cheese! I recently created Healthy Taco Bowls and they were such a huge hit in my house. You can’t go wrong with this Mexican style dish topped with delicious cheese!Healthy Taco Bowls

Healthy Taco Bowls

You will need:

1.5 lbs lean ground beef
1 onion, chopped
1 can kidney beans
1 can corn
2 tomatoes, chopped
2 avocados, chopped
1.5 cups tortilla chips, crushed
seasoning of choice
cheese of ChoiceHealthy Taco Bowls 2Cook ground beef in pan until done. Mix in onion, kidney beans, corn and season it to taste until warm. Remove from heat. Mix in crushed tortilla chips.

Use bowls to serve and top with tomato, avocado and cheese! Enjoy!

    Cheese is a big favorite in my family as well. I like that these can be customized for each person. I don’t eat meat so I’d do black beans instead.
