Honey Dijon Mac and Cheese

You can’t go wrong with a pasta dish. They are a family-favourite and most often, one of the easiest dishes to make. However, the time it takes just for the water to boil prior to putting in the pasta always drives me nuts. I am a busy mom and cutting down my time in the kitchen is something I strive for. This is where my delicious Honey Dijon Mac and Cheese comes into play!

I decided to use Barilla® Pronto™, which allows for pasta dishes quicker than before. No waiting on the water to boil. You can simply fill up your pan with cold water, throw in the pasta and within 10 minutes, the pasta is ready to go! This cuts down the time it takes to make pasta by at least 50% and for me, that is a huge plus!

Honey Dijon Mac and Cheese

Since my family can’t seem to get enough mac and cheese, I decided to give that a try with a few non-traditional ingredients to boot! I went with a Honey Dijon Mac and Cheese that turned out absolutely fabulous!

You will need:

Barilla® Pronto™ Cut Macaroni
1/4 Cup Honey Dijon Mustard
1/2 Cup Shredded Zucchini
1/2 Cup Red Peppers, chopped
2 Cups Cheddar Cheese
1 Can Evaporated Milk
2 Tablespoons Butter, cubed

Honey Dijon Mac and Cheese 2

Preheat oven to 375 Degrees Fahrenheit. Place the Barilla® Pronto™ Cut Macaroni into a pan with water and cook over high heat until the water is absorbed. This takes no more than 10 minutes! While you are cooking the pasta, take the time to shred and chop the veggies as well as grate the cheese.

Once the pasta is done, toss in the honey dijon mustard and mix. In a greased casserole dish, pour in the pasta. Top with zucchini, red peppers and cheese. Pour evaporated milk over dish and top with a few mini cubes of butter.

Cook for 50 minutes or until cheese is melted!

    We had this for dinner on Thursday when the grandkids came over for the last long weekend of the summer and we totally loved ….added to my favorite list….enjoy your weekend
