My kids love to watch superhero movies. My 10-year-old grew up with Spiderman as his favourite. My 5-year-old is all about Batman. Both of them also love Iron Man. Whether watching an Iron Man movie or cartoon, they never can seem to get enough.
So it made perfect sense to create the Iron Man Chocolate Chip Cookie Ice Cream Sandwich. It combines the deliciousness of a chocolate chip cookie with vanilla ice cream and the awesomeness of Iron Man. This is the perfect treat for superhero lovers of all ages!
Iron Man Chocolate Chip Cookie Ice Cream Sandwich
To create the colour base for the chocolate chip cookies, you will need to colour the dough in red and gold colours.
My personal favourite is using Wilton icing colours. Wilton Golden Yellow creates the gold, while Wilton Red for the Iron Man Red!
After the colouring of the dough, you will need to incorporate chocolate chips and M&Ms. You will want to pick out the red and yellow M&Ms for the Iron Man look.
An easy way to get the perfect-size dough shape for each cookie is to use an ice cream scoop.
You will want to try to get an even amount of each colour per cookie ball for the ultimate Iron Man treat!
When you put the cookie dough ball on the sheet, make sure that you press it down slightly so it flattens out nicely as it cooks.
Once cooked and cooled, you can put together each ice cream sandwich. What really puts this dessert over the top is the sprinkles.
A combination of black, red and gold sprinkles finishes the look. My personal favourite are the star sprinkles!
Iron Man Chocolate Chip Cookie Ice Cream Sandwich
Chocolate Chip Meets Iron Man in this delicious ice cream treat!
Ingredients
- 2 and 3/4 cups flour
- 1 cup butter softened
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups chocolate chips
- 1 cup M&Ms mini baking candies
- food colouring
- vanilla ice cream
- sprinkles
Instructions

Preheat oven to 375 Degrees Fahrenheit.

Using a large bowl or stand mixer, cream the butter, brown sugar and granulated sugar.

Add eggs, vanilla, baking soda and salt and mix until combined.

Add flour one cup at a time and mix until combined.

Separate the cookie dough into two equal parts and place each one in a separate bowl. Use food coloring to color them like Iron Man's colors, red and gold .

In a bowl, separate the M&M's so you only have red and yellow. Add chocolate chips, and M&M's to each portion.

Using an small ice cream scoop create a cookie dough ball. Scoop a portion out of each color and hand combine them and roll in your hands to create a cookie ball.

Slightly press the cookie ball down onto the cookie sheet. Bake for 8-10 minutes or until golden brown around the edges. Allow to cool.

Take your vanilla ice cream and allow it to slightly melt. Scoop out ice cream and place it on a parchment covered baking tray. Try to get it to be about 2 inches thick. Place in your freezer for 1 hour. Use a circle cookie cutter to cut out circles of your ice cream.

Place the ice cream on one of the cookies bottom side up. Then place the other cookie bottom side down on top of the ice cream. Roll the edges of the ice cream into the sprinkles.

Place the completed cookie on a baking tray covered in parchment paper. Freeze for 30 minutes.
