Jelly Bean Cupcakes

One of the best aspects of the holidays are the seasonal goodies you can find in the grocery store. It is a big reminder that holiday fun is shortly on the way, as well as a springboard for some awesome holiday treats. I always find myself wide-eyed in the seasonal aisle with tons of ideas running through my head.

Even my husband knows that when it comes to holiday baking, I am on a mission! With Easter in a few weeks, I couldn’t help but think of Jelly Beans. They come in so many spring colours and flavours. Plus, kids love them.

Since I normally don’t buy them any other time of the year, I made sure to pick up a large package with fun colours. At the time, I wasn’t sure how to incorporate them into something yummy, but I eventually decided on Jelly Bean Cupcakes. They are not only ridiculously easy, but fun to make!

Jelly Bean Cupcakes

You will need:

  • cake mix of choice, prepared into cupcakes
  • jelly beans
  • frosting

Choose to make cupcakes using either a prepared cake mix or homemade recipe. One of my favourite homemade recipes is for Maple Cake with Caramel Buttercream Frosting!

Prepare recipe as directed and pour into cupcake pan. Insert one jelly bean per cupcake and bake as directed.

One cooled, frost cupcakes. I went with my Best Ever Buttercream Frosting I also dyed the frosting to give it a colourful pop.

Place a jelly bean on top of each cupcake and done!
