Potato Chowder Soup

Here in Canada, winter is cold. I am always thankful for having a warm home and good food!

Nothing is quite as fabulous as a deliciously warm soup on a cold winter day. This Potato Chowder Soup is not only hearty and filling, but sure to become a family favourite.

Potato Chowder Soup

Potato Chowder Soup

Prep Time: 15 minutes

Cook Time: 6 hours

Makes: 6 servings 

Ingredients:

  • 2 cups vegetable broth
  • 4 potatoes
  • 1 can Thai Kitchen® Coconut Milk
  • 1 onion
  • 2 carrots
  • 3 celery stalks
  • 1 cup Club House Imitation Bacon Bits
  • 1/2 cup Club House Potato Starch

Tools needed: Slow Cooker

Directions:

  1. Chop vegetables.
  2. Place all ingredients in slow cooker and mix.
  3. Set slow cooker to 6 hours on low.
  4. Check and stir periodically.
  5. Add additional bacon bits for taste.

    I love potato soup so this is something for me, I was surprised there was no fish in this and I was relieved to read that the red bits aren’t chilly but in fact bacon bits 🙂
