Pumpkin Pie Crepes

One thing I can never seem to get enough of for fall is pumpkin! Whether enjoying them in a recipe, drink, or for decorations, pumpkins are just that fabulous. I have a few favourite pumpkin recipes, but it is always nice to try something new!

I took a look through the large selection of recipes at Ricardo’s and came upon their thin breakfast crepes. I loved that the recipe used ingredients I had on hand in my kitchen. I decided to change it up a bit and made Pumpkin Pie Crepes!

Pumpkin Pie Crepes

Pumpkin Pie Crepes

You will need:

  • 1 tablespoon pumpkin pie spice
  • whipped cream for toppingPumpkin Pie Crepes 2

Directions:

Combine flour, sugar, pumpkin spice and salt. Add eggs, ½ cup milk, vanilla, and stir with a whisk until smooth. Gradually add remaining milk, stirring constantly. Whisk in melted butter.

Preheat a 9-inch non-stick skillet over medium heat. Brush with butter when the skillet is hot.

Pour about 3 tablespoons of batter in the center of the skillet. Tilt skillet to spread batter evenly until it covers the entire bottom of the skillet. When the edge peels off easily and begins to brown, it’s time to flip the crepe with a spatula.

Continue cooking for about 10 seconds and then remove from skillet.Top each crepe with whipped cream and syrup of choice! You can also sprinkle additional pumpkin pie spice for garnish!

These delicious crepes don’t disappoint and are perfect for breakfast or a yummy brunch!
