Pumpkin Pie Cupcakes

When I think of Fall, I always think of gorgeous leaves and pumpkin. I have always found the perfect time to bake all things pumpkin to be during September through December.

I wanted to try something a little different than my normal, so I went with Pumpkin Pie Cupcakes. All I can say is, they are right up there with pumpkin pie for me now!

I found this recipe will on Pinterest from OMGChocolateDesserts.com and so glad I did!

You Will Need:

  • 15 oz pumpkin puree
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • ¾ cup evaporated milk
  • ⅔ cup flour
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ¼ tsp baking powder
  • 2 tsp pumpkin spice
  • whipped cream

Preheat the oven to 350 Degrees Fahrenheit. You will need to grease/spray a 12-cup cupcake pan.

In a large bowl, mix flour, pumpkin spice, salt, baking soda and baking powder. In another bowl, mix together pumpkin puree, sugar, eggs, evaporated milk and vanilla. Add ingredients together and mix well.Pumpkin Pie Cupcakes 3

Fill the cupcake pan with mixture. You will need about 1/3 cup for each cup. Bake for 20 minutes.

Once out of the oven, let the cupcakes cool for roughly 20 minutes before removing them from the pan. Let them cool completely in the fridge. They are best served cold!

Easy and Delicious Pumpkin Pie Cupcakes that are perfect for fall and beyond!

Once ready to serve, top with whipped cream and a sprinkle of pumpkin pie spice. Pumpkin sprinkles optional!

    Those sound amazing! I bake with a lot of pumpkin in the fall, but never tried those. And btw, those sprinkles are ADORABLE!!!

    I just made a pumpkin cake last night so I’m totally in the fall mood too! I should have made cupcakes instead because it would have been much easier to pack up for all my family to take home. Cutting cake is the worst!

    Finally it’s that time of year again for all things pumpkin! I’ve never heard of pumpkin cupcakes so these are interesting. And the kids could help decorate with different autumn themed sprinkles/toppings!

    This looks delicious! I hate that we normally only make “pumpkin” treats around fall, I will have to try this for the kiddos in the next little while. I am sure they will be thrilled!
