Pusheen has been a favourite cat character of mine for some time now. You can’t ever go wrong with a chubby kitty cat with frisky whiskers. I have a Pusheen Box Subscription and one of the products that arrived was a Pusheen cookie cutter!
I finally got the opportunity to try out the cookie cutter and created delicious Pusheen Cupcake Cookies. I went with a sugar cookie recipe as this makes for an easy cookie base to decorate on.
Pusheen Cupcake Cookies
For the cookies, you will need:
- 5 cups flour
- 2 cups sugar
- 4 eggs
- 1 & 1/2 cups butter
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon salt
Preheat the oven to 400 Degrees Fahrenheit. In a large bowl, cream together butter and sugar. Mix in vanilla and eggs. Mix in the remaining ingredients.
Chill dough for at least an hour prior to rolling out. Once you are ready to roll out, make sure the surface is floured to avoid sticking. Use cookie cutter for Pusheen shape and place on ungreased cookie sheet.
Bake for roughly 6 minutes. Cool completely before decorating.
For decorating, I used my Best Ever Buttercream Frosting Recipe. I used Wilton Black Gel Dye to create the shades of grey. I piped out the darker grey features with a #1 Wilton Tip.
I then used a Wilton #16 Tip to pipe out the cupcake base. I then topped it with sprinkles and allowed to set. These were ridiculously delicious and were eaten up in no time at all!

My daughter would absolutely love these! she is such a cat person, I don’t even think she would want to eat this. Probably save it and carry it around with her everywhere while mommy tries not to eat it on her lol
