It is officially 2016. It is going to take me a bit to get use to using 2016 vs 2015. January is a fresh start to what I hope is going to be a fantastic year ahead. One aspect I am reaching for is spending more time with the kids. A great way to start that is by saving time in the kitchen.

I came upon a quick chicken and dumplings recipe from Betty Crocker and had to try it for myself. It was not only delicious, but perfectly easy for any night of the week!Quick Chicken and Dumplings

Quick Chicken and Dumplings

You Will Need:

1 1/2 cups milk
1 cup frozen green peas and carrots
1 cup cooked chicken, cubed
1 can (10 3/4 ounces) condensed creamy chicken mushroom soup
1 cup Original Bisquick mix
1/3 cup milk
Paprika, optional
Quick Chicken and Dumplings 2In a medium saucepan, heat 1 1/2 cups milk, soup and peas and carrots to a boil.
In a bowl, mix together Bisquick and 1/3 cup milk until a soft dough forms.
Drop dough by spoonful (about 8) onto the chicken mixture in the saucepan. Sprinkle with paprika if you want.
Cooked uncovered over low heat for 10 minutes.
Cover and cook an additional 10 minutes.

As I child I hated dumplings, I have no idea why, but now I thoroughly enjoy eating them. This seems to be a nice simple and quick method of making a nice tasty meal with them, thanks for sharing 🙂

That sounds delicious! One of my resolutions is to not spend any money on eating out, so we’ve had to do a lot more cooking at home! So far, I’ve kept that resolution (including not buying even a coffee out!!) but I’m always on the look out for delicious and easy recipes like this one!

This is something I could make for my husband quite often!! He needs more calories than most because of a metabolism issue. I will have to keep all of these ingredients in stock!
