The weather has been getting better here lately. There has been much more sunshine and it looks like the constant snowing may be behind us. It has definitely put me in the mood for baking.
As donuts are always a favourite with my children. I decided I wanted to make a fun spin on them. I ended up making rainbow unicorn donuts. They were a huge hit with the kids!
Rainbow Unicorn Donuts
As fun as it can be to go with a new recipe, I wanted to make these donuts out of a recipe favourite. I also needed a must-have addition to complete the look.
To create the fabulous colours, I used Neon Food Colouring. It created the perfect colours of pink, purple, blue and yellow. You can add more or less of each colour to soften or intensify the colour you create.
To create the 4 individual colours in the donut pan, I separate my donut dough. I put dough into 4 different bowls and then added the appropriate dye.
After spraying the donut pan with cooking spray, I used a small spoon to scoop up each colour of dough. I used a different spoon for each of course and tried to make it so there was an equal amount of each colour. You don’t have to be perfect on this either!
For the donut topping, I went with icing sugar and sprinkles. With the neon food colours, you can choose whatever colour you want the icing sugar to be. I made mine with pink and only one drop as I didn’t want it very intense.
For the sprinkles, I went with pink and green sugar sprinkles. Any type of sprinkles that you have on hand will be fabulous for these donuts. Pastel colours work best.
Rainbow Unicorn Donuts
Delicious Homemade Donuts with a Rainbow Unicorn Look!
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 3/4 cup buttermilk
- 2 eggs
- 2 tbsp butter melted
- 2 tsp baking powder
- 1 tsp salt
- 1/4 tsp nutmeg
- neon food colouring
- sprinkles
Icing Sugar
- 1 cup icing sugar
- 4 tbsp milk
- 1/2 tsp vanilla
- neon food colouring
Instructions
- Preheat oven to 425 degrees F. Spray doughnut pan with nonstick cooking spray.

In a large mixing bowl, sift together flour, sugar, baking powder, nutmeg and salt. Add buttermilk, eggs and butter. Beat until just combined.

Fill each donut cup approx. 2/3 full.
- Bake 7-9 minutes or until the top of the doughnuts spring back when touched. Let cool in pan for 4-5 minutes before removing.

Once the donuts are cooled, top with icing sugar and sprinkles.
