Red Curry Shrimp

My husband loves shrimp. I normally don’t cook with shrimp, but I wanted to make him something unique that he would enjoy eating! I have several cans of coconut milk and had noticed that on the back of the cans was a recipe for Red Curry Shrimp!

I loved how easy the recipe was as well as the fact I had all the ingredients on hand! I even added some corn for extra deliciousness! The recipe turned out amazing and my husband loved every bite!

Red Curry Shrimp

Red Curry Shrimp

You will need:

1 lb shrimp, peeled and deveined
1 can (400 ml)  coconut milk
1 cup corn
2 tablespoons red curry paste
2 tablespoons fish sauce
1 tablespoon brown sugar

Red Curry Shrimp 2

In a large skillet on medium heat, bring coconut milk to simmer. Mix in sugar and curry paste. Bring mixture to a boil, reduce and simmer for 5 minutes.

Add in shrimp and corn. Cook for 5 minutes until the shrimp turns pink. Mix in fish sauce.

Serve with jasmine rice for a great flavour combination!

    These are all ingredients I have on hand all the time so this would be an easy recipe for me to make. I’ll have to give it a go!

    This looks so good, I’m not a fan of curry but if it’s mild it’s ok so I’d reduce the amount and love this meal 🙂

    wowie this looks good. I have never had anything like this before (shrimp in fish sauce, coconut milk and corn) but I totally wanna give this a try. a huge fan of shrimp and rice so this is bound to be yummmmmmers

    My husband would probably love this, but the ingredients aren’t ones I usually have on hand. I guess I’ll have to make a trip to the grocery store!
