Spinach Mushroom Crepes

I didn’t always consider myself a fan of spinach. As a kid, the closest I ever wanted to come to even being near spinach was when I would watch the old Popeye cartoons. It was one of the early morning cartoons on television prior to school, so that was about it for my spinach interaction.

However, my mother-in-law introduced me to her yummy Spinach Mushroom Crepes and I fell in love with the taste. Since then, I have found how delicious spinach really is in a variety of recipes.

I took my mother-in-law’s delicious Spinach Mushroom Crepes and made them in my own way. The best part really is that when you fill the crepes, you can use as much or as little of each ingredient as you want.

Spinach Mushroom Crepes

Spinach Mushroom Crepes

You will need:

To make the crepes:

  • 2 cups flour
  • 1 cup milk
  • 1 cup water
  • 4 egg whites
  • 1/4 cup melted butter
  • 1/2 teaspoon salt

To fill the crepes:

  • 1 package frozen spinach
  • Monterey Jack Cheese
  • Fresh Mushrooms

Mix crepe ingredients together. Spray a frying pan with non-stick spray and heat to medium high. Pour roughly 1/2 cup crepe mixture and tilt pan to coat the surface. Once the bottom of the crepe is cooked, flip it to cook additional side.

Preheat oven to 400 degrees Fahrenheit.

Fill each crepe with a combination of mushrooms, spinach and cheese. Warm the spinach and squeeze out excess water prior to using in crepe. Fold them tightly and arrange in a casserole dish. Top with additional cheese.

Bake for 35 minutes or until the cheese is thoroughly melted.

    These look delicious. They remind me of my 90 year old grandmother, she used to make crepes for me all the time as a kid with fresh picked raspberries from her backyard. These are a grown up version; I will have to try them. Yum!

    We are not big fan of spinach in this house but I can see trying these crepes, just keeping the amount of spinach down at first until we see how we like them. Would love to find ways to get some spinach in our diets!

      I soooo hear you on that one Heidi. I never made crepes until a couple of years ago. I was convinced they were too difficult, but once I tried it … they are ridiculously easy! You will NOT be disappointed!

    I don’t like spinach so I’d have to substitute that with something else, broccoli perhaps. I tried spinach as a very young kid – I persuaded my mother to buy it after watching Popeye the sailor man. Needless to say it didn’t have the desired increase in strength and I’ve disliked it ever since.
