The month of December is always one of my family’s favourites. With all the fabulous Christmas goings on, you really have a month full of fun activities, yummy treats and family time. In our home, you can usually always find us baking something delicious and watching a Christmas movie! Those two activities just go so well together.
To start our most recent Christmas fun, we made Whipped Shortbread Cookies. I found an awesome recipe thanks to ThisLilPiglet and just had to recreate it. It turned out to be even more delicious than I could have expected!
Whipped Shortbread Cookies
You Will Need:
- 1 lb of butter (2 cups/1 block)
- 1 cup of corn starch
- 2¾ cups of all-purpose flour
- 1 cup confectioners sugar (white icing sugar)
- Additional confectioners sugar for rolling cookies in
Preheat oven to 325 Degrees Fahrenheit.
With an electric mixer, cream the butter. Add cornstarch and mix until blended. Add in the icing sugar and blend well. Gradually add in the flour and whip until you have a thick texture.
Drop 1 tsp of mixture onto an ungreased cookie sheet. Bake for 7 minutes.
Carefully remove cookies from the cookie sheet and roll them in a bowl of confectioners sugar until coated.
