Zucchini Banana Muffins

My mother-in-law visited us this last week and it was great. She is always so very helpful and the kids love her so much. Thankfully, she even did a lot of the grocery shopping for the week and we got to enjoy her cooking.

After she left, there were extra bananas and zucchini that needed to be used before they went bad, so I decided to make Zucchini Banana Muffins! They turned out delicious and were so easy to make!

Zucchini Banana Muffins

You will need:
3 bananas, ripe and mashed
1 zucchini, grated
1 egg
1 and 1/2 cups flour
3/4 cup sugar
1/3 cup butter, melted
1 teaspoon baking power
1 teaspoon baking soda
1/2 teaspoon salt

Preheat your oven to 375 Degrees Fahrenheit.

In a large bowl, mix together mashed bananas and zucchini. Mix in egg, sugar and melted butter. Finally, stir in baking powder, baking soda, flour and salt!

Grease a large muffin pan and fill each with 1/3 cup of the mixture. Cook for roughly 18 minutes.

    Sounds good, will have to try them out. Putting zucchini into baking is the only way I can get my family to eat it.
