This was actually my first time using an instant pot and I really was surprised how quickly these ribs cooked. You can easily eat these short ribs without putting them into a taco as well. Make it your own kind of delicious!
Instant Pot Short Rib Tacos
The first thing you need is an instant pot. I used a Breville Pressure Cooker to create mine. There are quite a few different instant pots out there, but I have always been happy with Breville.
I think what blew me away most about this experience is the fact that it cooks in no time at all and put my slow cooker to shame! Obviously, this recipe can be done with a slow cooker if you don’t have an instant pot, but it takes longer so be prepared for that.
You are going to want to sear the short ribs prior to adding them to the instant pot. This will allow for a good browning of the meat and with only 60 minutes in the instant pot, it is a quick meal!
I loved being able to just set it and forget it basically. If you end up going with the slow cooker option, it takes about 5-7 hours, so prepare for that if you are going this route!
Instant Pot Short Rib Tacos
These easy and quick short rib tacos are an instant pot hit!
Ingredients
- 6 lbs beef short ribs bone-in
- 1/2 cup water
- 2 tbsp vegetable oil
- 1 large onion
- 2 cloves garlic crushed
- 3 canned chipotle chilies in adobo sauce chopped
- 2 tbsp chili powder
- 1 and 1/2 tbsp dried oregano
- 1 and 1/2 tbsp salt
- 2 tsp ground cumin
- orange zest
- tortillas
- lime
- cheese
- tomatoes
Instructions
- Select SEAR and preheat the cooking bowl. Add vegetable oil and warm until simmering. Cook the meat until browned. Move meat pieces to plate.
- Add in onion and cook until starting to brown, roughly 5 minutes. Add garlic.

Stir in water, orange zest, salt, ground cumin, dried oregano, chili powder and chipotle chilies in adobo sauce. Return the meat to the cooking bowl.
- Select PRESSURE COOK (120 psi/60 min/ Auto Quick) or SLOW COOK BONE-IN MEAT (5-7 hours, HI, 9-11 hours LO). I went with the Pressure Cooker for this and it was so delicious!
- Once cooked, remove the bones from the meat and season with lime. Serve on tortillas and with toppings of your choice!

I just got an Instant Pot for Christmas this year, and this recipe looks perfect for it. Never thought of using short ribs as they would be a cheaper cut of meat for tacos! And, considering my first child adores tacos, I definitely need to try this one out!!!!
